Anna’s Eats will be 1 month old on Sunday! It seems like I have only been blogging for a few days, not an entire month :)

I have a fun weekend coming up, but may not be able to blog again until Monday afternoon :(  I’m going to NY with John for a baseball game. It’s supposed to be perfect game watching weather with temps in the 80′s!

My camera cord was right where I left it yesterday afternoon, at my desk! Now I can share a pic from last night with you.

Here are the goods I baked last night. The cookies were cooling on a wire rack when I snapped this pic.

These are snickerdoodles. They came out sooo good! They are a little crunchy on the outside, soft on the inside and coated with cinnamon and sugar (before going into the oven).  I got the recipe from my mom who said it’s actually a recipe from a cookbook (we’re not sure which one)  my grandmother had found a long time ago. I baked these cookies with my mom for the holidays ever since I could remember.

My day has flown by. Hope yours has to0!!!

Around 11am I snacked on a nectarine. It was really juicy for being a bit crunchy and unripe. There’s still a couple nectarines on the kitchen counter and when they ripen up they are going to be super juicy :)

Lunch was a salad with roasted chickpeas, radish, carrot, and tomato. I also had a potato bun that I ate as an open-face sandwich with a couple of scoops of hummus on both sides.

Still no rain! I ate lunch with co-workers outside on the picnic tables and I couldn’t believe how warm it was. I snapped the photos of my lunch at my desk beforehand. There were a lot of people eating lunch outside today and not all my co-workers know about my blog so I didn’t want to whip out my camera and have to explain myself!

I won’t be able to post dinner until tomorrow. I am heading to John’s tongiht and he’s still working on setting up his wireless access.

Workout UPDATE:

Monday- 30 minutes strength training, 10 minutes yoga stretch

Wednesday- swimming class, 15 minute strength

Thursday- 2 mile walk

My goal is to exercise 3-4x a week. I met my goal for the week, but today’s walk was on the light side so I am going to squeeze in another workout.  Maybe a Pilates class Saturday morning?

Back to work!  (One more day until the weekend, but who’s counting?)

Lunch was eaten over the course of a few hours today! It started around noon with last night’s leftovers.

My stomach started to rumble around 2pm and I realized I hadn’t eaten any fruit today except for the raisins in my cereal. I mixed a mini box of raisins with some applesauce. This combo is really sweet, but light! And it’s an easy, portable snack to keep at work.

Lunch finally ended with another oatmeal cookie. Sorry no pic of this cookie, but it looked just like the first one I ate :)

I think I should be all set now until dinner!! I never got around to working out yesterday. Tonight I will get some cardio in though at swim class. I never learned to swim so I’m learning now. Better late than never, right? I am going to try to fit in 1-2 more workouts this week to meet my goal of working out 3-4x each week. It’s only Wednesday so I think I can do it! I’ll let you know how it goes…

Saturday morning felt like Sunday morning with this Breakfast…

Saturday morning was spent shopping with John. Lunch was later than usual so I had a small snack that I ate in the car.

We finally made it to lunch around 2:30 at a local pizza shop.

This was a great salad! The veggies were nice and CRISP. It was perfect for a warm summer afternoon on the go. Grilled chicken topped the salad and it came with pita bread on the side. John and I both ordered the same lunch, except he had ranch dressing and it was balsamic vinaigrette for me. After ordering we realized we could have split one salad. After we ordered we saw the cook throw SIX full size chicken breasts on the grill. Yep, THREE per salad!! Here are my leftovers….

After stopping home to drop off everything purchased it was snack time for me so we could head out for some more shopping. I had 8 BLACK BEAN tortilla chips that I used to scoop up some chunky salsa with.

Dinner was grilled and so GOOD!!! A pork chop marinated in Wishbone’s new bountiful Santa Fe Salad dressing (my new fav dressing!), some salsa, soy sauce and buffalo sauce (John put this concoction together!), a half of grilled tomato, some onions and peppers on top of the pork chop, a breadstick and corn on the cob. YUM!

Sunday’s breakfast was a quick bowl of cereal before heading out to the beach! I had some Kix with rice milk and a banana.

John packed some sandwiches to bring to the beach while I was getting ready! I was starving by the time I got to eat my lunch (which was only noon!)

I opened the sandwich so I could show you what was inside. On one side of the potato bread was turkey, tomato and spicy mustard and the other side had some Virginia baked ham with some more mustard.  It was so good and I ate it in about 5 seconds! I also had a container of OJ with my lunch.

Around 4:30 we were back home and I had a sweet, juicy plum. I almost forgot to take a picture so here is the plum half eaten!

I had a hamburger with tomato, pickle and ketchup on top. I also had a hot dog without the bun. I ate the entire hamburger, but left a few pieces of the hotdog because I also had a few potato chips that aren’t pictured. That’s some mustard and relish on the side that I dipped the hotdog in.

 I had been feeling like baking for a few days now and finally got around to it tonight! I made some oatmeal raisin cookies and ate ONE hot out of the oven. The recipe was Quaker Oat’s. You can find the recipe on the inside lid of the oatmeal canister.
