Lunch today was pretty tasty, but NOT pretty looking!

It’s been a busy day so I ate 1/2 of my lunch while working at my desk and the other half outside. It was nice to enjoy a little bit of fresh air!

First up was some canned fruit- peaches in pear juice that had no added sugar. I prefer fresh fruit, but was in a hurry and grabbed what I could.

My sandwich was not photogenic today!  I heated up some leftover turkey meatballs and piled ‘em on a potato roll.

It may not look too good, but it filled me up and tasted just as good as when I had them for dinner earlier this week. Now I’m ready to get back to work…

I will be celebrating a friend’s birthday tonight over dinner. I’ll post the birthday EATS and an update on this afternoon’s snacks either late tonight or tomorrow morning.  I hope the second half of my workday goes as fast as the first 1/2 did!

While you were all reading about my dinner in Philly at Pietro’s that I posted Wednesday night, I had dinner with my mom and she cooked for me! We had pasta with turkey meatballs :) Here’s how she made this tasty dish…

Hi, it’s Anna’s mom Gloria. I like popping in from time to time!

When Anna introduced me to ground turkey meat  I wasn’t thrilled at first because I didn’t quite like the taste. Now I really like it! I experimented with a few recipes and came up with some good ones.  I only use extra lean, white meat turkey which has 7% fat. If you can find turkey meat that has rosemary extract in it use that one, it tastes really good.

Here’s my basic recipe: For one pound of turkey meat I use ¼ cup bread crumbs, 1 egg, ¼ cup water and one medium onion sautéed. This makes the meat nice and moist. I also add salt, pepper and garlic powder.

My favorite recipe is turkey meatballs in tomato sauce. 

From start to finish: 

Mix the turkey meat with all the ingrediants listed above in the basic recipe.

Step 1

Next, make walnut sized balls with the turkey meat.

Step 2

Then, fry them in olive oil so they brown on all sides.

Step 3

Put 2 cans of crushed tomatoes in a saucepan and season to taste. Cook for 20 minutes on a simmer. Then add the turkey meatballs and cook for an additional 20 minutes.

Step 4

Boil your favorite pasta, and you have dinner!

I also make turkey burgers.  I use the same recipe as above, but I add in 1 cup of chopped spinach. Thaw  frozen spinach, but do not boil it. Squeeze out the excess water and add the spinach to the mixture. I fry the burgers in a very small amount of olive oil. They are very tasty!

Turkey meat can be sticky to handle so when I make the meat balls I use a teaspoon and shape them as I push them off the spoon. When I make the burgers, I make them ahead of time and refrigerate them on wax paper.
