My day continued to be uneventful, but it was exactly what I needed! I took a little nap this afternoon to try to make up for my sleepless nights this past week. I also took a 2 mile walk. Well it was more like a stroll, but at least I got a little exercise in today. I am going to TRY to make it to the gym tomorrow for a good, sweaty workout :)

Here are my dinner EATS:

A hamburger that was hot off the grill, so good! Fresh corn on the cobb and yes another appearance by the garden zucchini. I haven’t had zucchini in 2 days so I guess it was bound to make its way back into my diet today ;) It was also grilled.

I ate the burger bunless so I wouldn’t be too full to eat the corn. It was a big one! I like to get my fill of fresh, summer corn while I can.

I also had some ketchup for dipping. I put ketchup on just about everything, but I won’t put it on a hot dog. Strange huh? Every bite of my hamburger really had this much ketchup on it…

This afternoon’s snack was a slice of homemade zucchini carrot bread that was made a couple of weeks ago. If you cut homemade bread when it’s fresh into individual slices and freeze it, it won’t spoil and makes a good, quick snack. 

Hopefully I will have a decent sleep tonight and a more active day tomorrow. See you in the A.M!

I did some quick shopping during lunch today, but first my EATS…

I went with a friend to the NY Deli for lunch. I eat there a lot since they have so many healthy options. Today I felt like something different so I got breakfast for lunch :)  I had an egg white and ham sandwich on toasted rye bread.  The ham was grilled, it was so crispy and good! And there was ketchup on the side for some dipping. Of course, I had to say NO to the cheese…

Before stopping to eat I did some speed shopping! I was on the lookout for some new bowls and placemats. I purchased this bowl and dish….

He was cute, but I didn’t think I could eat my cereal with him staring at me every morning ;) I also bought a couple of bright placemats. I can’t wait to use them!

My morning snacks were a banana and a small bowl of apple cobbler that I made Monday night.

UPDATE: I had a bowl of apple cobbler this afternoon. I am officially addicted!!!

Before I left for Philly Thursday I had a very productive afternoon! I managed to check everything off my TO-DO list…

  • Finish packing
  • Get an oil change
  • Clean my car since I will be spending lot sof time in it! (Philly is about 6 hours from Boston with NO traffic!)
  • Get my GUEST BLOG POSTS set up and ready to go
  • Buy some SNACKS for the trip
  • Work until 1 pm

And thensome…

I knew John and I would be leaving right around dinner time so that afternoon I started thinking about DINNER! I knew I didn’t want any greasy fast food especially since I would be sitting in the car all night. I decided to grill instead and pack dinner to go. Luckily the downpours ended so I didn’t have to turn the oven on, it was a HOT day!

I marinated chicken breast in buffalo sauce for a couple of hours before I lit up the grill. I also marinated zucchini in oil, salt, pepper and garlic powder and grilled it too. All cooked and ready to go…

I put some ketchup on the sandwich too. It may sound like a strange combo, but I put ketchup on just about everything! I couldn’t use mayo or creamy ranch dressings because of my dairy allergy so I used ketchup which is always my go-to condiment :)

It was definitely worth the effort to pack the sandwiches and SO much better than grabbing whatever was along the way :) I also snacked on some potato chips later on that night in the car.

I woke up HUNGRY today! Everytime I start up an exercise routine I am hungry all day long. I made a protein packed breakfast so I wouldn’t snack all morning.

A pile of egg whites and a slice of lean bacon on a toasted English muffin. I put some ketchup on the egg whites before I ate it :)

Do you find that a breakfast loaded with  carbs,  protein , or a combo of both keeps you full until lunch?

It’s going to be another busy day today.  I am trying to finish up all my work because I have some time off later this week. John and I are taking a trip to Philly! Be on the look out for some posts by GUEST BLOGGERS at the end of the week.  It should make for some fun reading :)

My MONDAY morning could not have gotten off to a better start :)

It was warm, sunny and NOT raining for a change. John and I got up early and headed out the door around 6:30  for a 45 minute walk. I still feel so energized from the walk!

This morning EATS was an egg over easy on top of a pita pocket with some ketchup for dipping on the side.

I had a small dish of watermelon when I got home and started work for the day. I work from home on Mondays so it’s the perfect opportunity to cook healthy meals and get back on track from the weekend’s splurges :)

 Nice, huh? Today was a great day for the beach!

I woke up with the sun at 5:30am :) and did 20 minutes of yoga. What a great start to the day! I wasn’t too hungry for breakfast since it was early, but wanted to eat something so I wouldn’t be starving later on. I toasted and English muffin and had egg whites with it.

I made sandwiches and packed some snacks for John and I to take along to the beach. We had Virginia baked ham, with pickle and some spicy mustard in a pita pocket .

On the drive home from the beach I had a serving of Stacy’s Simply Naked Baked Pita Chips. These would be great dipped in hummus and salsa, maybe even some guac! But since I was in the car I enjoyed them plain.

Stacy’s Pita Chips are all natural and contain NO Trans fat or MSG. They make for a pretty healthy snack and I have found them to be a good alternative to potato chips! One serving of the Simply Naked Pita Chips have 130 calroies and 2 grams of fiber. I have also tried the cinnamon sugar variety. They will def satisfy your sweet tooth!

While uploading the pics of all my EATS  to my laptop I snacked on a small plum. I couldn’t snap a pic since my camera was busy at the time ;)

Since today was actually the first day that felt like summer in quite a while- nice and sunny with NO RAIN- we decided to take advantage of the outdoors for a little while longer! We ate outside at Charlie’s Kitchen in Harvard Square.

My EATS were a grilled chicken sandwich with tomato and onion. I topped it with lots of KETCHUP! I also ordered a side salad that was more like a veggie platter. All the veggies- green peeper, carrot sticks, cucumber, tomato and onion- were so crunchy and fresh :) There was a little lettuce under all the veggies, but I never made it that far since I was so full from the sandwich. I also had a beer that is not pictured.

Hopefully tomorrow will be as sunny as today!
