As an afternoon snack I had a piece of apple pie. I made the pie last night for dessert, but I wanted it to be quick so I used a ready made pie crust and a couple of cans of apple pie filling. There were no fresh apples involved so the pie wasn’t  “healthy,” but it was still a nice treat.

Since I was working at home today there was plenty of time after work to make dinner. On the menu was meatloaf, potatoes and a zucchini dish. Here’s how to prepare the meatloaf.

Here is what the meatloaf looked like from start to finish. It was stuffed with peas and mushrooms. You can use whatever veggies you like, just be sure to cook them first if they are fresh so they don’t stay crunchy in the middle of the meatloaf.

The zucchini dish was very tasty! Along with the sliced zucchini is some onion and tomato.

And here is my potato with some ketchup for dipping. After it was finished cooking I sliced the potato, sprinkled ground pepper, salt and garlic powder on it and put it in the toaster oven to get extra crispy!!

 This is what I ate of the meatloaf and zucchini x3! I usually would have had another afternoon snack, but got sidetracked this afternoon so I was extra hungry when dinnertime came around.

I had another piece of apple pie for dessert too. Sorry no pic, but it looked exactly like my first slice. Tomorrow I will be at work and not working from home so there will be no pie to tempt me! Have a good night
