My day continued to be uneventful, but it was exactly what I needed! I took a little nap this afternoon to try to make up for my sleepless nights this past week. I also took a 2 mile walk. Well it was more like a stroll, but at least I got a little exercise in today. I am going to TRY to make it to the gym tomorrow for a good, sweaty workout :)

Here are my dinner EATS:

A hamburger that was hot off the grill, so good! Fresh corn on the cobb and yes another appearance by the garden zucchini. I haven’t had zucchini in 2 days so I guess it was bound to make its way back into my diet today ;) It was also grilled.

I ate the burger bunless so I wouldn’t be too full to eat the corn. It was a big one! I like to get my fill of fresh, summer corn while I can.

I also had some ketchup for dipping. I put ketchup on just about everything, but I won’t put it on a hot dog. Strange huh? Every bite of my hamburger really had this much ketchup on it…

This afternoon’s snack was a slice of homemade zucchini carrot bread that was made a couple of weeks ago. If you cut homemade bread when it’s fresh into individual slices and freeze it, it won’t spoil and makes a good, quick snack. 

Hopefully I will have a decent sleep tonight and a more active day tomorrow. See you in the A.M!

Before I left for Philly Thursday I had a very productive afternoon! I managed to check everything off my TO-DO list…

  • Finish packing
  • Get an oil change
  • Clean my car since I will be spending lot sof time in it! (Philly is about 6 hours from Boston with NO traffic!)
  • Get my GUEST BLOG POSTS set up and ready to go
  • Buy some SNACKS for the trip
  • Work until 1 pm

I knew John and I would be leaving right around dinner time so that afternoon I started thinking about DINNER! I knew I didn’t want any greasy fast food especially since I would be sitting in the car all night. I decided to grill instead and pack dinner to go. Luckily the downpours ended so I didn’t have to turn the oven on, it was a HOT day!

I marinated chicken breast in buffalo sauce for a couple of hours before I lit up the grill. I also marinated zucchini in oil, salt, pepper and garlic powder and grilled it too. All cooked and ready to go…

I put some ketchup on the sandwich too. It may sound like a strange combo, but I put ketchup on just about everything! I couldn’t use mayo or creamy ranch dressings because of my dairy allergy so I used ketchup which is always my go-to condiment :)

It was definitely worth the effort to pack the sandwiches and SO much better than grabbing whatever was along the way :) I also snacked on some potato chips later on that night in the car.

No, the title of my lunch post is not a typo. I got tired of writing zucchini since I eat it at least once a day now so I looked up how to say it in Italian, but it’s not so different at all!

At least the zucchini in my lunch wasn’t grilled this time.  It’s still growing like crazy in the veggie garden. I am surprised though that I’m not sick of it yet!

I  layered hummus, tomato and zucchini on two slices of rye bread and ate it as an open faced sandwich. The zucchini was cut into round slices, dipped in egg, breadcrumbs and then baked in the oven until crispy. I warmed up the zucchini and tomato in the microwave. I never warmed up slices of tomato in the microwave before, but it was good! I didn’t want to eat the zucchini cold and thought cold tomato and warm zucchini eaten together would just throw the whole sandwich off ;) It I could eat cheese, a zucchini and tomato pannini would probably taste real good…

It’s another hot day with no rain in sight (I hope I didn’t just jinx it!) so I ate lunch outside. I got this lunch bag not so long ago to carry my lunch to work in. It’s my small effort to be green and not use a different plastic or paper bag every day :)

UPDATE: For accountability sake…my snacks this morning and afternoon were a nectarine, some watermelon and a serving of Stacy’s Simply Naked Pita Chips :) Work is busy today so I didn’t have time to take photos in between meetings.

I’m leaving tomorrow for Philly and just finished packing. I pretty much threw all my favorite shorts, tank tops, T-shirts and PJs into my suitcase and figured I would iron all my outfits at the hotel as I wear them! I usually take the time to iron everything before I pack, but it usually gets wrinkled anyway and I have to do it all over again. Maybe not the best packing strategy, but it’s all I had time for tonight! We’ll see how it works out…

My dinner EATS included yet another zucchini dish!

The ingredients are zucchini slices, crushed tomatoes, kidney beans and spinach with some salt and pepper. Cook zucchini over medium heat in a little olive oil until it just starts to get tender . Then add in the rest of the ingredients and cook until all the veggies are soft, but not wilted.

I was able to get my walk in this afternoon! I did one loop around the office park. Halfway through I was thinking about doing another loop, but the clouds were rolling in and it was getting darker and darker. Sure enough it started to rain, but I made it inside just in time :)

I took a quicker than usual lunch break earlier today so I was able to sneak outside for 10 minutes this afternoon to take a short walk with a co-worker. No rain and 85 degrees today:) I think summer may finally be here to stay!!

After work I went to the gym for a quick  but sweaty WORKOUT!

Eliptical- 15 minutes

Bike- 15 minutes

Bicep curls- 2 sets of 15

Side bends- 15 reps each side with weieghts

I ate some grapes on my way to the gym to carry me over until dinner. I hate working out when I feel hungry- I would have just wanted to leave the gym and go home to EAT!

After the gym I headed to John’s. I wasn’t very hungry and neither was he. We just grilled some veggies- zucchini, asparagus and tomato- and ate them with  hummus and pita chips.

not me, my purse! Now that I carry around my camera, camera cord sometimes the camera charger I can’t seem to close it any more. Time to shop for a new bag! Or maybe a separate bag just for my camera so we don’t have to share anymore :)

Lunch was a salad with greens, carrot, tomato and radish with oil and vinegar dressing. On the side I had a piece of (cheese-less) zucchini quiche. I also had a potato roll with lunch. The roll was a last minute decision and I didn’t have my camera with me so I wasn’t able to take a pic.

Today’s only Tuesday but I am halfway done with my work week! Two more days to go until a nice little vacation :)

Dinner was a little random tonight! I didn’t get finished working until 8:30 so I heated up a little bit of EVERYTHING :) First up was pasta with sausage, mushroom, onion and fresh basil from the veggie garden in a tomato sauce.

CEREAL UPDATE: I finally made it to the store to search for some new cereal! I decided on Barbara’s Puffins, the original variety. I have had the cinnamon ones before and liked them. I thought I’d try the plain variety so I could spice ’em up with some summer fruit!  I also chose this cereal because it is dairy free, 100% natural and high in fiber. I bought some Corn Chex for John’s house (I had a box of Kix there too and one at work!) . And I don’t know what I was thinking, but I grabbed yet another box of Kix!?! I couldn’t help it….

It’s just after 10pm and I need to fold some laundry so I can get to sleep! Good night :)

Today’s lunch needed to be quick. It’s a busy day!

As a snack around 2pm I had a GLASS of rice milk. I actually buy rice milk in little containers (like juics boxes!!) because they are a single serving and perfect to bring to work for breakfast or a snack. I find the large containers always spoil before I have a chance to get to the bottom of them!

Pork chop, sweet potato and grilled zucchini. I had a few more pieces of sweet potato and another griiled zucchini round that are not pictured.

I felt like I got an extra good cardio workout at swimming class tonight :) And I’m off to do some strength exercises after I finish this post. This way I’ll feel like I got double the workout in tonight just incase I slack off later in the week ;)

My stomach started to rumble around 2pm and I realized I hadn’t eaten any fruit today except for the raisins in my cereal. I mixed a mini box of raisins with some applesauce. This combo is really sweet, but light! And it’s an easy, portable snack to keep at work.

Lunch finally ended with another oatmeal cookie. Sorry no pic of this cookie, but it looked just like the first one I ate :)

I think I should be all set now until dinner!! I never got around to working out yesterday. Tonight I will get some cardio in though at swim class. I never learned to swim so I’m learning now. Better late than never, right? I am going to try to fit in 1-2 more workouts this week to meet my goal of working out 3-4x each week. It’s only Wednesday so I think I can do it! I’ll let you know how it goes…
